There can be condensation dripping from diffusers, smoke loss at the hood, high velocity at the pass through, draft at the front door, negative building pressure and many upset customers. In our Air Balancing tests for restaurants around the Sacramento and Bay Area we conduct  Kitchen Exhaust Hood Testing.  The Health Department of California requires this test to make sure that the kitchen exhaust hood in each restaurant is properly balanced with the right airflow. For safety, the kitchen exhaust hood must be installed and working properly.
